Directions

Step 1

Season the shrimp with chili powder, cumin, salt, and pepper.

Step 2

Heat olive oil in a skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and slightly charred.

Step 3

While the shrimp cook, make the slaw by tossing cabbage and carrot with Greek yogurt, half the lime juice, salt, and pepper.

 

Step 4

Warm the tortillas in a dry skillet for about 20 seconds per side.

 

Step 5

Divide the shrimp among the tortillas and top each with a generous scoop of slaw.

 

Step 6

Squeeze the remaining lime juice over the tacos, add cilantro and hot sauce if you like, top with some queso fresco and dig in.
